The period of time that follows the harvest is with no doubt the most demanding from cellar perspective. All ongoing fermentations must be monitored step by step having the absolute respect for the terroir, the vintage and the variety. At Elvio Cogno we work hard to preserve the freshness and fragrance that only our vineyards can donate. Attention to details, cleanliness, care, are all necessary gestures to ensure all this to happen. Regarding our vinifications, Barolo fermentations have been quite long, with a good amount of whole clusters which help to amplify wines complexity. The alcohol levels, around 14/14.5%, are balanced due to a long and juicy freshness. The 2019 wines are in general of good structure, tendentially robust but mitigated by finesse, balance and acidity. Our Dolcetto shows an intense fruitiness, bright purple color and elegant structure, yields are lower than 2018. Both our Barbera, Bricco dei Merli and Pre-phylloxera, mirror already characters of great importance, with good alcohol content due to the vintage performance and exceptional freshness. Our Nascetta merits a special praise because in a vintage like 2019, overall excellent for the whites, is showing its character and link with the Barolo terroir. To enhance these features and to permit even a longer aging dedicated to balance and finesse, for the first time a small percentage will do an aging period in large barrels. Works at the winery are proceeding with the completion of the wine-shop and our new tasting room on the panoramic terrace, which will be both inaugurate on January 2020, and with the works start for our new offices.
